Year 8 have been busy making cheese straws demonstrating a practical application of their knowledge of the pastry making process. The process of shortening occurs when a fat such as butter is used to coat flour particles, thus giving a short crumbly pastry with a melt in the mouth texture. Students experimented with shaping and plaiting to create a range of shapes and styles, all with excellent flavour as confirmed by Mr Geddes who became our intrepid and impromptu taste tester!
